The Tomahawk is the most dramatic steak in the butcher's arsenal – and Barlows' Tomahawk Steak lives up to every bit of the spectacle. Weighing approximately 1.1kg to 1.2kg, with its long, Frenched rib bone and incredibly thick ribeye, this is a cut designed to make a serious statement. Hand-prepared by our fourth-generation Nottinghamshire butchers with the precision and care it deserves. The ribeye muscle is one of the most flavourful on the animal – beautifully marbled with intramuscular fat that melts during cooking to create an unrivalled richness and depth of flavour. The long bone, typically 30-45cm in length, adds further flavour during the cooking process and makes for a genuinely breathtaking presentation at the table. This steak is best reverse-seared for the perfect result – cook low and slow in the oven at 120°C until close to your preferred internal temperature, then sear hard in a screaming hot cast iron pan or over blazing coals for a perfect crust. Rest generously for at least ten minutes before serving. The Tomahawk is an event in itself – treat it as one.
