Our Chicken Parcel is a genuine Barlows creation that showcases the skill and creativity of our fourth-generation Nottinghamshire butchers. A plump, fresh chicken breast is carefully butterflied open, filled with our own traditional sage and onion stuffing, then wrapped in a back bacon rasher and prepared ready for roasting. The result is quite extraordinary – as the bacon crisps up in the oven, it bastes the chicken in its own rich, smoky fat, keeping the breast wonderfully moist and juicy throughout cooking. Meanwhile, the sage and onion stuffing fills the kitchen with a magnificent roasting aroma and adds a herby, savoury depth that perfectly complements the clean flavour of the chicken. Simply roast at 190°C for 25-30 minutes until the bacon is golden and crispy and the chicken is cooked through. Rest for five minutes before serving. Plate with roasted potatoes, seasonal greens and a rich gravy for a dinner that looks far more impressive than it was to prepare.
